Ingredients:
1 lb. dried red beans
1/2 lb. salt pork
3 cups chopped onion
1 cup chopped green onion
1 cup chopped parsley
1 tablespoon garlic salt
1/4 teaspoon dried whole oregano
1/2 teaspoon red pepper
1/2 tablespoon Worcestershire sauce
1 teaspoon hot sauce
1 (8 oz.) can tomato sauce
1 pound smoked sausage, cut into 1/4 inch slices
hot cooked rice

Directions: Sort and wash beans, place in a large Dutch oven. Cover with water 2 inches above beans, soak overnight. Add salt pork to beans, cover and simmer 45 minutes. Stir in onion, green onion, parsley, garlic salt, oregano, red pepper, Worcestershire sauce, hot sauce, and tomato sauce, continue to cook 1 hour. Brown sausage, drain, add to beans. Cover and simmer 45 minutes, add more water if necessary. Serve over rice. Serves 6 to 8.
