Homemade Chicken and Noodles

Ingredients:
6 eggs
1 tablespoon water
3 3/4 cups flour
1 cooked and deboned fryer
6 quarts boiling water
minced onion (optional)
chopped celery (optional)
shredded carrots (optional)
parsley (optional)











Directions: To make noodles add eggs, water and flour and mix well. Put dough on floured table and roll very thin. You may have to add a little flour at a time to prevent dough from sticking. Allow to dry 20 to 30 minutes before rolling out and cutting in thin strips. After cutting in strips, separate the slices and allow to dry completely if you are wanting to store them. May be stored for several months in air tight containers or bags. Bring water to a boil and add chicken. Stir noodles into boiling broth. Keep broth boiling until all noodles have been added. Reduce heat and simmer 20 to 30 minutes or until tender. Season to taste. You may add any of the following; minced onion, chopped celery, shredded carrots and parsley. Chicken broth can be substituted to make a richer broth.

Notes: Mom's noodles are still a crowd pleaser!
