1 lb. fresh or frozen broccoli
1 1/2 - 2 cups cooked and diced chicken or turkey
1 can cream of chicken soup
1/2 cup milk
1/2 cup shredded Cheddar cheese
1 1/2 cup cooked rice
Directions: Cook broccoli, drain well. Pour into a 9x9 greased baking dish. Top with chicken. In a mixing bowl, combine soup, milk and rice. Mix well. Put this on top of the chicken and broccoli. Sprinkle with cheese and bake until hot and bubbling for 15 to 25 minutes at 450°F.
Notes: My house usually has very few leftovers, but when I do, I create a new main dish.
