4 pounds golden delicious or other baking apple, peeled
11 tablespoons butter
1 cup granulated sugar
2 teaspoons vanilla
1 loaf country white bread, sliced 1/4-inch thick
Directions: Preheat oven to 400F. Quarter and thinly slice apples. Melt 3 tablespoons butter; add apples, sugar and vainlla. Cook, strring ocasionally, until apples are tender and jucies evaporate, 20 to 25 minutes. Melt 1 stick butter until solids separate from fat. Drain clear butter into a dish and discard solids. Cut berad to fit the bottom of the dish(es). Brush one side of the bread with melted butter. Cut remaiing bread to line the
dish(es) with pieces overlapping slightly and some projecting above the rim (later to be folded over the apple filling); brush inside with melted butter. Spoon cooked apples into bread-lined dish or dishes, packing appples frimly to the rim. Fold bread tops into center, overlapping each other. Set on baking sheet and bake until tops are golden and very crisp, 20 -25 minutes. Cool. After 10 or 15 minutes charlottes can be removed from the dishes and tranferred to serving plates, top side up. Delicious served with whipped cream or ice cream. Makes 4 servings.
Notes: A Charlotte has a crust made of bread. You can use a large souffle dish or smaller ones - or bake the charlotte in any kind of ovenproof dish.
