Summer Sausage
Chef:  Wanda Crownover - Lubbock, TX          Category:  Appetizers

Ingredients:
2 pounds ground beef
1 cup water
2 tablespoons tender quick salt
2 tablespoons liquid smoke
1 tablespoon brown sugar
1/4 teaspoon onion salt
1/2 teaspoon garlic powder
1 tablespoon mustard seed












Directions: Mix all ingredients together well. Shape into 2 rolls. Wrap in plastic wrap, then place in a plastic bag. Keep in refrigerator for 24 hours. Take out of refrigerator, remove bag and plastic wrap. Place on a broiling pan, so grease can drip. Cook 45 minutes at 300°F, turn over and bake for 20 minutes more. Wrap with paper towels to remove grease. Cool. Wrap in plastic wrap or wax paper. Keep in refrigerator in a plastic bag.

Notes: This is my mother's recipe and is a family favorite.
