1/2 cup butter (do not use margarine)
1 teaspoon ground cumin
1 teaspoon cardamom
1/2 teaspoon finely ground red pepper
4 tablespoons granulated sugar
1/2 teaspoon salt
6 cups pecan halves
Directions: Melt butter in saucepan. Add cumin, cardamom, and red pepper. Cook 1 1/2 minutes stirring constantly. Remove from heat. Add remaining ingredients and stir thoroughly to mix well. Spread pecans in a single layer in large jelly roll pan. Bake for 20 minutes in preheated 300°F oven. Stir every 5 minutes being sure you do not have pecans on top of each other. Cool. Store in a airtight container or serve warm.
Notes: I purchased a cone of spiced nuts and paid $5.95, so I decided to try making my own.
