1 cup baking mix
1/4 cup skim milk
1/4 cup onion, finely chopped
1 (10 oz.) package chopped spinach, thawed
9 tablespoons Parmesan cheese
4 oz. Monterrey Jack cheese
1 (12 oz.) container cottage cheese
2 cloves garlic, crushed
1 egg, beaten
Directions: Grease 9x13 inch pan. Mix baking mix, milk, 2 eggs and onion. Beat vigorously. Spread in bottom of pan. Mix remaining ingredients and spoon over batter in dish. Bake 30 minutes or until set at 350°F. Let stand 5 minutes before serving.
Notes: Excellent dish for brunch or holiday buffets!
