Ingredients:
1 pound uncooked shrimp, peeled and deveined
1 tablespoon butter
2 cloves garlic
1/2 (large) onion, chopped
2 cups instant rice
4 cups chicken broth
1/2 cup tomato sauce
1 teaspoon oregano
1 1/2 teaspoons salt
1 teaspoon cumin
1 tablespoon chili powder

Directions: Saute garlic, onion and butter in nonstick skillet until tender. Add remaining ingredients except shrimp and simmer 15 minutes, uncovered. Add shrimp and simmer an additional 5 to 7 minutes.
Notes: More or less chili powder can be added depending on how spicy you like it.
