Potato Soup Supreme

Ingredients:
2 (large) potatoes, peeled, cooked and cubed
3 bacon strips, diced
1 (small) onion, chopped
1 clove garlic, minced
1 teaspoon dried basil
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
3 cups chicken broth
1 cup half and half cream
1/2 teaspoon hot pepper sauce
Cheddar cheese, shredded
minced fresh parsley







Directions: Do not over cook potatoes. Fry bacon until crisp; drain and set bacon aside. Saute onion and garlic in bacon drippings until tender. Stir in flour, salt, pepper and basil. Mix well. Gradually add broth and bring to a boil and stir for 2 minutes. Add potatoes, cream and hot pepper sauce; heat but don't boil. Garnish with bacon, cheese and fresh parsley. Makes 4 to 5 servings.

Notes: When I added dried basil, hot pepper sauce, I thought it made my plain potato soup so much better.
