Ingredients:
1 1/2 pounds ground beef
1/2 cup onion
18 ounces tomatoes, whole or diced
8 ounces tomato sauce
1/2 cup water
1 to 2 teaspoon salt
1 teaspoon pepper
1 1/2 teaspoon chili powder
2 teaspoons garlic
1 teaspoon cumin seed
1 medium zucchini









Directions: Brown ground beef and onion in a small amount of oil. After the meat is completely browned add the remaining ingredients except zucchini. Simmer for about 15 to 20 minutes then add the zucchini on top of the meat mixture. Cover and cook on medium until the zucchini is done. Serve with Parmesan cheese sprinkled on top.

Notes: This is a great dish with a southwestern flare.
